Recollecting The Special Holiday Soul Through Our Household Table
Noche Buena, 2 words that literally means “a good night”, is an occasion that requires big family get-togethers and an extreme quantity of Filipino food shared, for many of us Filipinos.
Each family would have their very own unique combination of appetizer, main dish and desserts, which arrangements are usually the collaborative work of the members themselves.
Flowers and Events owner Teddy Manuel recalls their dining room table being garnished with lechon manok, sweet ham, queso de bola, hot chocolate as well as delicious bread.
“it is all about family get together and getting out of bed at twelve midnight,” Teddy says.
RenRem Ann, event assistant of Aristocrat, stated that customary holiday bestsellers include palabok, chicken barbeque and also kare-kare.
“A lot of these are the filipino food they grew up with,” he said.
Chef de cuisine of Cafe 9501 (of ABS-CBN’s ELJ building), Raul Ramos also provided us a list of his Christmas Day favorites. He stated that growing up, he anticipated eating desserts such as creamy fruit salad and the classic Leche Flan. Sweet ham plus queso de bola were also basics in their table.
“Our Yuletide table won’t be complete without the ham and queso de bola,” he Chief Cook added.
He also mentioned that his family typically uses unique ingredients on some of their favorite Filipino recipes, for this type of special event.
“Just like for Beef Morcon, for a normal day we usually use regular sausages,” shares Chef Raul. “But for the yuletide season, we make use of chorizo bilbao, queso de bola cheese and salted egg making it more wonderful.”
Chef Raul mentions that the Noche Buena not just talks about the special meals we wish to eat. “This event keeps the family members together, to share presents and have some fun together,” he explained. “And most of all, to pray and give thanks to God for all of the blessings and guidance in our family.”
